WHITE CHOCOLATE CHEESECAKE | |
Crust: 1 1/2 packages Cinnamon Graham Crackers (about 12-14) 1/2 stick butter (melted) Crush graham crackers--add melted butter and mix together. Pour into 9 inch spring form pan and press onto bottom. Place crust in over at 375°F for approximately 10 minutes. Let cool. Batter: 2/3 cup whipping cream 12 oz. white chocolate 4 (8 oz.) packages cream cheese 1/2 cup butter softened 2/3 cup powdered sugar 2 tsp. vanilla Chop white chocolate and put in small bowl. Put whipping cream in small sauce pan and heat just to simmering. Pour white chocolate into cream and set aside (off heat) for 2-3 minutes. Stir gently with rubber spatula until smooth. Beat cream cheese and softened butter at medium speed until creamy, add powdered sugar, beat until fluffy. Add white chocolate mixture and vanilla. Beat 3 minutes or until smooth. Pour into pan, cover and chill in refrigerator until firm (about 4 hours). Enjoy! |
