NO BAKE BUTTERSCOTCH CORNFLAKE
COOKIES
 
1 (12 oz.) pkg. butterscotch chips
1/3 c. chunky peanut butter
6 c. cornflakes, measure before crushing

Crush cornflakes. Melt chips and peanut butter over hot water. Stir in crushed cornflakes, mixing well. Drop by spoonfuls on wax paper. Let set until cool. Place in covered container. Yields 36 to 40 pieces.

Yum! They were very good! I didnt know what melt over hot water meant, but i melted them in the microwave and they tasted very good.

These are very easy to make and my husband has just approved the result. Melting over water means use a double boiler or melt the ingredients in a dry pot, which is sitting in a pot of simmering water (this is how I did it). The crushed flakes don't stick together at all when warm but they stick beautifully when cooled.

I've been making these for the extended family Christmas for the past few years. They are always a big hit. We've found that they taste a little better (to us, anyway..) if we add a single tbsp. of sugar to the batch before spooning out the cookies for cooling. We also increase the peanut butter to 1/2 cup, which works out from an overall bulk standpoint as most of the retail bags of butterscotch chips are 10.5 or 11 oz., not 12 oz.
