ENCHILADA CASSEROLE 
1 1/2 lbs. ground beef
1 can mushroom soup
1 can cream of chicken soup
1 lb. cheddar cheese, grated
1 onion
9 oz. taco sauce
12 corn tortillas, soft
Salt & pepper to taste

Brown meat and onions, drain off excess fat. Add soups and taco sauce. Simmer a few minutes. Grease large pan and line with 1/2 tortillas. Layer cheese and meat and tortillas. Top with cheese and bake at 350 degrees.
