MASHED POTATO CASSEROLE II 
5 lbs. potatoes
2 (8 oz.) pkgs. cream cheese
Salt, pepper, and butter to taste
Milk
2 eggs
1 tsp. baking powder
Chopped scallions

Peel potatoes and boil until tender. Drain. Beat together all ingredients, except scallions, with enough milk to make creamy mixture. Fold in scallions. Bake in a buttered casserole dish, uncovered, at 400 degrees for 30 minutes or until lightly browned and puffy.

OPTIONAL: Sprinkle with paprika before baking. Recipe may be halved.
