ZUCCHINI BREAD | |
1 c. chopped walnuts 4 eggs 2 c. granulated sugar 1 c. vegetable oil 3 1/2 c. flour 1 1/2 tsp. baking soda 1 1/2 tsp. salt 1 tsp. cinnamon 3/4 tsp. baking powder 2 c. zucchini, grated (skin and all) 1 tsp. vanilla 1 c. raisins or candied fruit Beat eggs. Gradually add sugar and oil. Combine dry ingredients and add alternately with grated zucchini. Stir in raisins, walnuts, and vanilla. Turn into 2 well-greased and floured loaf pans (9 x 5 x 2 3/4 inches). Bake at 350 degrees for 55-60 minutes. May be frozen. |
