ORANGE NUT BREAD | |
1 med. sized orange Boiling water 1 c. pitted dates 2 tbsp. melted shortening 1 tsp. vanilla 1 egg 2 c. flour 1/4 tsp. salt 1 tsp. baking powder 1/2 tsp. baking soda 3/4 c. sugar 1/2 c. chopped nuts Place unstrained juice and pulp from the orange in measuring cup, and fill to one cup mark with boiling water. (Orange juice, pulp and boiling water together should measure one cup). Pour into mixing bowl. Discard the white pulp clinging to skin, and put orange rind and dates through food chopper. The orange rind and dates together should measure one cup. Add to liquid in mixing bowl. Blend in the melted shortening, vanilla, and well beaten egg. Sift flour, salt, baking powder, soda and sugar together and blend into fruit mixture. Add nuts. Pour into well greased and floured loaf pan. Bake one hour and 20 minutes in moderate oven (350 degrees). |
