CHICKEN SALAD ORIENTAL 
DRESSING:

1/2 c. Canola oil
6 tbsp. rice vinegar
4 tbsp. sugar
2 tbsp. dark sesame oil
4 tsp. soy sauce
2 tsp. dry mustard
1 tsp. grated fresh ginger

SALAD:

6 roasted chicken breast halves
Shredded lettuce (Romaine)
1 c. peanuts or sliced almonds
Fried rice or cellophane noodles
2 chopped tomatoes

For the dressing, combine all ingredients in a blender. Slice the chicken.

For the salad, combine the tomatoes, chicken, Romaine, nuts in a bowl. Toss in a bowl and serve on a bed of crisp noodles - not chow mein noodles!
