SPANISH HOMINY 
1 (28 oz.) can hominy
1 med. onion, chopped
1 diced bell pepper
Diced green chiles to taste
1 lb. ground hamburger
1 can tomato soup
1 tsp. salt
1 tbsp. chili powder
Grated Cheddar cheese

Cook onion, bell pepper and chiles in small amount of oil until tender. Add ground meat and cook until brown. Add some of the liquid from hominy, 1/2 to 1 cup and tomato soup, salt, chili powder and cook 10 minutes. Add drained hominy after cooked down. Put in baking dish and sprinkle with cheese. Bake at 350 degrees until cheese is melted.
