TAHINI LEMON SAUCE | |
1 1/2 c. tahini (sesame seed paste) 1 1/2 c. yogurt or buttermilk 1 med. clove crushed garlic 1/2 c. fresh squeezed lemon juice 1/4 c. finely minced scallions 1/4 c. finely minced parsley Salt to taste Dash or two of cayenne Dash or two of paprika 1/2 tsp. ground cumin Dash or two of tamari Beat well using a whisk, wooden spoon or even electric mixer. The more you whip the thicker it becomes. Slightly increase the ratio of yogurt or buttermilk to tahini and use it as a hearty salad dressing. Serve room temperature on hot falafel or vegetables or chilled on a salad. |
