MATZO BRIE 
2 eggs
1/2 tsp salt
2 tsp. grated onion (optional)
2 matzos
Butter or oil for frying

Beat eggs, salt, and onion together. Put matzo in a collander and pour boiling water over to soften. Crumble matzo into medium sized pieces and mix with eggs. Heat oil in frying pan and add matzo mixture. Fry until lightly browned on both sides. This is a traditional breakfast food during the Jewish holiday of Passover when no bread or leaving can be used. Serves 1 or 2.
