EASY - CRUST RHUBARB PIE 
1 c. flour
1/2 c. butter
5 tbsp. powdered sugar

FILLING:

1 1/2 c. sugar
1/4 c. flour
2 c. sliced rhubarb
1/4 tsp. salt
3 eggs

Mix flour and powdered sugar. Cut in butter with a pastry blender. Press mixture into a 9 inch pie pan. Bake 15 minutes in a moderate oven. Beat the eggs and stir in sugar, salt, and flour. Mix in rhubarb and spoon into the hot crust. Bake an additional 35 to 40 minutes. Serve slightly warm or cold.
