EGGPLANT AND SHRIMP 
3 med. eggplants
3 eggs
1 lg. onion, chopped
2 tsp. salt
1/2 tsp. pepper
1 tbsp. sugar
2 tbsp. butter
1 c. grated sharp cheese
2 c. cracker crumbs
2 c. cooked peeled shrimp

Boil eggplant until tender. Drain and mash eggplant and add other ingredients. Put in buttered casserole dish that is large enough for casserole to be about 1 inch thick. Place in 350 degree oven for about 45 minutes or until brown on top.
