DRIED BEANS (BLACKEYED PEAS, PINTO, NAVY, ETC.) | |
2 cups dried beans, Blackeyed Peas, Pinto, Navy, etc. 1 onion, chopped 1 clove garlic, pressed 1/2 lb. salt pork, sliced thick or smoked ham hocks 1/4 tsp. dried red pepper 1 stalk celery, chopped water 1 tsp. salt Pick and wash beans under running water. Put beans in 2-quart pot, cover with water, add salt and boil about 15 minutes. Let stand until cool, drain, rinse and set aside. Put the remaining ingredients in a 4-quart pot, cover with water, bring to a boil and let simmer for 1 hour. Add the beans and cook another 2 hours. Excellent with Cole Slaw and Corn Bread! |
