FRUIT COCKTAIL CAKE | |
2 eggs 2 c. flour 1/4 tsp. salt 1 (17 oz.) can fruit cocktail (juice & fruit) 1 tsp. vanilla 1 1/2 c. sugar 2 tsp. baking soda Beat eggs. Add sugar and beat about 5 minutes. Add sifted dry ingredients to egg and sugar mixture. Add fruit cocktail and vanilla and mix. Bake at 350 degrees for 30 minutes. Remove from oven and top with the following icing. ICING: 1 c. evaporated milk 1 stick butter 1/2 c. coconut 2/3 c. sugar 1/2 tsp. vanilla 1/4 c. nuts (if desired) Mix milk, sugar and butter. Cook in saucepan until thick. Add vanilla, nuts and coconut. |
