CURRIED CHICKEN & BROCCOLI
CASSEROLE
 
2 (10 oz) frozen broccoli chunks
3 chicken breasts, cooked and diced
2 (10 3/4 oz) cream of chicken soup
1 c mayonnaise
1 tsp lemon juice
1 tsp curry power
1 c shredded cheddar cheese, mild or sharp
1 c croutons
1 tsp butter, Melted (for pan)

Preheat oven to 350°F. Cook broccoli in microwave as directed on pkg, or until tender. Drain and arrange in a shallow greased pyrex baking dish. Place chopped chicken on top. Combine soup, mayo, lemon juice, and curry powder. Pour and spread on top of chicken. Sprinkle croutons on top and bake, 15 to 20 minutes or until bubbly. Sprinkle cheddar cheese on top of croutons and continue baking for 10 minutes, or until cheese is melted.

Since microwave ovens vary in power, you may need to adjust your cooking time.
