CIDER APPLESAUCE 
2 lb. tart apples
2/3 c. apple cider
2 tbsp. lemon juice
1/3 c. sugar
1/8 tsp. salt

Peel, core and cut apples in 1/4 inch thick wedges. In a saucepan, combine apples with cider and lemon juice; bring to a boil over medium high heat. Reduce heat; simmer 15 minutes or until apples are almost tender. Add the sugar and salt, and break the apples into pieces with a fork. Cook for 5 minutes more and then remove from heat to cool.
