SPICY BLACK BEAN RICE 
1 (10 oz.) can Rotel (or other brand diced tomatoes and green chiles)
1 (15 oz.) can black beans
Minute Rice (or other instant rice)
Tortilla, corn chips, or tortilla chips
Pepperjack cheese

Preheat oven to 350°F. Pour Rotel and beans into casserole dish. Fill empty Rotel can with uncooked rice and stir into dish.

Bake at 350°F for about a half-hour or until rice is cooked. Top with slices or shreds of pepperjack cheese. Serve on tortillas, as dip with low-fat corn ships or alone as an entree.
