SLICED BAKED POTATOES 
4 medium potatoes, scrubbed
1 tsp. salt
2 tsp. dried herbs or any spice (sage, chives, etc.)
4 tbsp. grated Cheddar cheese
3 tbsp. butter
1 1/2 tsp. Parmesan cheese

Carefully partially slice potatoes; lay a spoon to side to prevent cutting all the way through. Place in baking dish. Gently separate slices. Salt and pepper. Use herbs here.

Bake at 425°F for 45 to 50 minutes. Sprinkle with both cheeses and bake 10 minutes more. Should be lightly browned and cheese melted.
