CHEESY CRAB-STUFFED POTATOES 
4 med. baking potatoes
Vegetable oil
1 c. (4 oz.) shredded sharp Cheddar cheese
1/2 c. butter, melted
1/2 c. half & half
1/4 c. diced onion
1/2 tsp. salt
1/4 tsp. ground red pepper
1 (6 oz.) can crabmeat, drained, flaked and chopped
Paprika

Scrub potatoes thoroughly and rub skins with oil. Bake at 400 degrees for 1 hour or until done.

Allow potatoes to cool to touch. Cut potatoes in half lengthwise; carefully scoop out pulp, leaving shells intact. Spoon pulp into a mixing bowl. Add remaining ingredients, except paprika; mash with a potato masher. Stuff shells with potato mixture; sprinkle lightly with paprika. Bake at 425 degrees for 15 to 20 minutes. Yield: 8 servings.
