TURTLE COOKIES | |
1 1/2 cups flour 1/4 tsp. baking soda 1/4 tsp. salt 1/2 cup butter 1/2 cup brown sugar 1 egg 1 egg yolk 1/4 tsp. vanilla 1/8 tsp. maple flavoring Pecan halves Sift together flour, baking soda and salt. Combine together, butter and brown sugar, creaming well. Stir in the egg and yolk, reserving the white. Blend in the vanilla and maple flavoring, adding the dry ingredients gradually. Beat until thoroughly mixed. Arrange split pecan halves (rounded side up) in groups of three on greased baking sheets to resemble head and legs of a turtle. Using a teaspoon, scoop up a rounded portion of dough and mold the dough into balls. Dip bottom into egg white and press onto nuts. Bake in 350°F oven 10 to 12 minutes. Cool and frost generously. CHOCOLATE FROSTING: Combine 2 squares (2 oz) chocolate or 1/3 cup semi-sweet chocolate pieces, 1/4 cup milk and 1 tablespoon butter in top of double boiler. Heat over boiling water until chocolate melts. Blend until smooth. Remove from heat. Add 1 cup sifted confectioners sugar. Beat until smooth and glossy. |
