APPLESAUCE CAKE
2 c. flour
1 tsp. baking powder
2 tsp. baking soda
1 1/2 tsp. nutmeg
2 tsp. cinnamon
1 tsp. ground cloves
1/2 tsp. salt
3/4 c. (1 1/2 sticks) butter (room temperature)
2 c. sugar
2 eggs
2 c. unsweetened applesauce
1 c. nuts, chopped
1 c. raisins
Apple Glaze (recipe follows)

Preheat oven to 350 degrees. Grease and flour bottom and sides of 10 inch tube pan.

Stir together flour, baking powder, soda, cinnamon, nutmeg, cloves and salt in a bowl; set aside.

Beat butter, sugar and eggs in large bowl until light and fluffy. Stir in flour mixture alternately with applesauce, ending with flour. Fold in walnuts and raisins. Pour evenly into pan and level with spatula.

Bake in 350 degree oven for about 1 hour and 10 minutes. Remove from pan and cool on rack to room temperature.

Spoon Apple Glaze over top of cake so it drizzles down sides.

APPLE GLAZE:

Place 2 cups confectioners' sugar in small bowl. Stir in 3-4 tablespoons of apple juice until smooth and good glazing consistency.
