BEEF CASSEROLE 
1 lb. lean ground round
1/2 c. diced celery
1 tbsp. instant minced onion
1 can (28 oz.) whole tomatoes & liquid
1/2 c. uncooked long grain rice
1 tsp. chili powder
1/4 tsp. pepper
1 can (4 oz.) mushroom pieces & liquid

Place a plastic colander in a large glass mixing bowl. Crumble ground round into small pieces and cover with waxed paper. Microwave on HIGH for 5 minutes or until meat is no longer pink, stirring after 2 1/2 minutes.

In a 3-quart casserole, combine ground beef, celery, onion, tomatoes, rice, chili powder, pepper and mushrooms. Microwave covered on HIGH setting for 10 minutes, stirring half-way through cooking time. Stir well. Reduce power level to MEDIUM (50% power) and microwave covered for 20 minutes or until rice is soft. Serves 4.

Since microwave ovens vary in power, you may need to adjust your cooking time.
