SWEDISH CORN PUDDING | |
Tastes like sweet roasted corn. Topping is crunchy and lightly browned. A family favorite at holidays. You may double, triple etc. this recipe and it works very well. 1 (15 oz.) can creamed corn 2 tbsp. sugar 2 tbsp. heavy milk or cream 2 eggs 1 (or more) sleeves saltine crackers, crushed butter Crush 1 or more rows of saltine crackers, set aside. Spray a casserole dish. Mix creamed corn, sugar, milk/cream, eggs and crushed crackers. Pour into dish. Top with remaining crushed crackers and dot with butter.
