SWEDISH CORN PUDDING 
Tastes like sweet roasted corn. Topping is crunchy and lightly browned. A family favorite at holidays. You may double, triple etc. this recipe and it works very well.

1 (15 oz.) can creamed corn
2 tbsp. sugar
2 tbsp. heavy milk or cream
2 eggs
1 (or more) sleeves saltine crackers, crushed
butter

Crush 1 or more rows of saltine crackers, set aside.

Spray a casserole dish. Mix creamed corn, sugar, milk/cream, eggs and crushed crackers. Pour into dish. Top with remaining crushed crackers and dot with butter.

Bake at 350°F for 45 to 60 minutes or until knife in center comes out clean.

I usually make a different corn pudding but discovered this recipe and thought, "why not"?
