ZUCCHINI SQUASH 
1 med. sliced zucchini, unpeeled
1 can tomatoes
1 sm. onion, chopped
1 green pepper, chopped (optional)

Dice 2 1/2 slices of bacon - fry and put aside. Remove bacon from pan when crisp, place zucchini in the bacon drippings and rest of ingredients. Salt and pepper to taste plus 1/2 teaspoon oregano. An electric fry pan works best, as it steams it more. Cover the pan and stir once in awhile until zucchini is soft and mixes with other ingredients. When done, sprinkle bacon on top and serve hot. (Do not freeze with bacon on it.)
