CHEESY RICE BAKE 
1 c. brown rice, uncooked
1 garlic clove, minced
2 carrots
2 stalks celery
1 lg. onion
4 broccoli bottoms
3/4 c. green beans
2 squash, yellow or green
12 oz. sliced cheese (cheddar, Muenster or Monterey Jack)

Cook rice for 2/3 of cooking time in 2 cups water. Stir in garlic. Boil about 1" of water in large saucepan. Slice the vegetables putting the slowest cooking ones in the saucepan first. (Garlic, carrots, onions and celery on bottom. Broccoli and green beans in the middle.) Squash will go in last and should boil for no more than 2 or 3 minutes. In 8"x11" baking dish layer 1/2 of the rice and vegetables topped by 1/2 of the cheese. Repeat layer. Bake in a 350 degree oven for 45 minutes. 6 to 8 servings.
