WHITE CHOCOLATE CHIP COOKIES
WITH MACADAMIA NUTS
 
1/2 c. (1 stick) unsalted butter at room temperature
1/3 c. brown sugar
1/4 c. white sugar
1 lg. egg
1 tsp. vanilla
1 c. flour
1/2 tsp. baking soda
1/4 tsp. salt
2 tbsp. milk
6 1/2 oz. white chocolate, coarsely chopped
1/2 c. macadamia nuts, halved
1/2 c. coconut, chopped

Blend sugar, egg and vanilla until fluffy. Add flour, baking soda, salt and milk. Fold in chocolate, nuts and coconut. Mix until just combined.

Preheat oven to 375 degrees. Lightly grease two cookie sheets. Drop dough by tablespoon onto sheet, 2 inches apart. Bake until light brown around edges, about 15 minutes. Cool on cookie sheets 3 minutes. Transfer to rack and cool completely. Store in airtight containers.
