DOUBLE APPLE MUFFINS 
1 1/3 c. all-purpose flour
1 c. quick oats (uncooked)
1/3 c. firmly packed brown sugar
1 tbsp. baking powder
1 tsp. cinnamon
1/2 tsp. salt (optional)
2/3 c. milk
1/3 c. apple juice
1/4 c. vegetable oil
1 egg, beaten
3/4 c. peeled, cut up apples (about 1 med.)

Put in paper muffin cups, makes 12. Bake at 350 degrees for 22 minutes or until golden brown.
