APPLE CINNAMON MUFFINS 
2 1/4 c. oatbran cereal
1/4 c. brown sugar
1 1/4 tsp. cinnamon
1 tbsp. baking powder
1/4 c. chopped nuts
1/4 c. raisins
1/2 c. evaporated skim milk
3/4 c. frozen apple juice concentrate
2 egg whites
2 tbsp. vegetable oil
1 med. apple, chopped (including skin)

Mix dry ingredients in one bowl, wet ingredients in another bowl. Then mix the two together, add apple. Line muffin tins or grease and flour tins. Fill muffin tins almost to the top, as this recipe does not rise much. Bake at 425 degrees for 17 minutes. These may be stored in a plastic bag in the refrigerator or may be frozen. Makes 12 to 15 muffins.
