SPICY APPLE - OAT MUFFINS 
1 c. flour
1 c. quick-cooking oats, uncooked
2 tbsp. sugar
2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. apple pie spice
3/4 tsp. grated lemon rind
1 egg, beaten
1/2 c. unsweetened apple juice
1/4 c. skim milk
3 tbsp. vegetable oil
Vegetable cooking spray

Combine dry ingredients and lemon rind; make well in center of mixture. Combine egg, apple juice, milk and oil; add to dry ingredients, stirring just until moistened. Spoon into muffin pans coated with cooking spray, filling 3/4 full. Bake at 425 degrees 15 minutes. Yield 10 muffins (about 136 calories).
