GRANDMA G'S CARROT CAKE 
1 c. sugar
1 c. flour
1/2 c. oil
2 eggs
1 sm. jar strained carrots
1 tsp. cinnamon
1/8 tsp. salt
3/4 tsp. baking soda
3/4 tsp. baking powder
1/2-3/4 c. chopped walnut meats (optional)

Combine ingredients. Bake 25-30 minutes at 350 degrees.

FROSTING:

1 stick butter (make soft)
1 c. confectioners sugar
1/2 tsp. maple extract
