AUNT IVAHA'S CARROT CAKE 
2 c. flour
2 c. sugar
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon
4 eggs
1 c. cooking oil
4 c. shredded carrots
1/2 c. chopped walnuts

Sift together flour, sugar, baking powder and soda, salt and cinnamon. Beat eggs until frothy, slowly beat in oil. Gradually add flour mixture and beat until smooth. Mix in carrots and nuts. Pour into greased and floured pan (9x13). Bake at 350 degrees for 25 to 30 minutes. Can be cooked in two 9x13 pans and used for squares. Cool and frost with Cream Cheese Frosting.

CREAM CHEESE FROSTING:

4 tbsp. softened butter
6 oz. softened cream cheese
4 1/3 c. powdered sugar
1 tsp. vanilla or maple flavoring

Blend butter and cream cheese. Gradually add the sugar. Beat until thick and creamy. Stir in flavoring.
