CRANBERRY FRUIT NUT BREAD 
2 c. flour, sifted
1 c. sugar
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1 tsp. salt
1/4 c. shortening
3/4 c. orange juice
1 tbsp. grated orange rind
1 egg, well beaten
1/2 c. chopped walnuts
2 c. fresh cranberries, clean and chopped

Sift together flour, sugar, baking powder, baking soda and salt. Cut in shortening with fork until mixture resembles coarse cornmeal or peas.

Combine orange juice with well beaten eggs. Pour all at once into dry ingredients, mixing just enough to moisten. Carefully fold in chopped nuts and cranberries.

Spoon into greased and floured loaf pan. Spread batter slightly higher in the corners and sides of loaf pan. Bake at 350 degrees for approximately 1 hour or until cake tests done with a toothpick. Slices easier when refrigerated overnight.
