SCALLOPED OYSTERS | |
1/2 c. butter 1/2 c. flour 1 1/2 tsp. paprika 1/2 tsp. salt 1/4 tsp. pepper Dash cayenne 1/2 clove garlic, minced 1 med. onion, chopped 1/2 med. green pepper, chopped 1 qt. fresh oysters 1 tbsp. lemon juice 2 tsp. Worcestershire sauce 1/4 c. cracker crumbs Grease 2 quart casserole. Melt butter in large skillet over medium heat. Remove from heat, add flour and stir until smooth. Return to heat and cook, stirring constantly for 15 minutes or until light brown. Add paprika, salt, pepper, cayenne, garlic, onion and green pepper. Cook 3 to 5 minutes stirring constantly. Add oysters and their liquor, lemon juice and Worcestershire sauce. Stir well. Pour into casserole. Sprinkle with cracker crumbs. Bake at 400 degrees for 20 minutes. 6 to 8 servings. |
