APPLESAUCE RAISIN CAKE 
2 sticks butter
2 c. chunk applesauce
1 tsp. cinnamon
2 tsp. baking soda
1 c. raisins
2 c. sugar
3 c. unbleached flour
1 tsp. nutmeg
1 tsp. vanilla extract

Preheat oven to 325 degrees. Grease and flour tube pan. Cream butter and sugar. Stir in applesauce and vanilla. Sift dry ingredients together and sift over applesauce mixture. Sprinkle in raisins and blend gently but thoroughly. Pour into tube pan and bake approximately 1 hour and 15 minutes. Cool in pan 15 minutes, turn out and cool completely.

LEMON/ORANGE ICING:

1 c. XXX sugar
1 1/2 tsp. fresh lemon juice
1/2 tsp. cinnamon
1 1/2 tsp. fresh orange juice

Sift sugar into small bowl, dribble in juices, stirring until smooth. Drizzle over cooled cake.
