HALLOWEEN BREAD | |
1 cup white sugar 1/2 cup brown sugar 1 cup cooked pumpkin 1/2 cup vegetable oil 2 eggs, unbeaten 2 cups all-purpose flour 1 tsp. baking soda 1/2 tsp. salt 1/2 tsp. nutmeg 1/2 tsp. cinnamon 1/4 tsp. ginger 1/4 cup water 1/2 cup pecans, chopped 1 cup raisins (optional) Preheat oven to 350°F. Combine and mix well the sugars, pumpkin, oil and eggs. Sift together and add flour, baking soda, salt, nutmeg, cinnamon and ginger. Stir in water. Add pecans and raisins (if using). Mix well and spoon into greased and floured loaf pan. Bake at 350°F for 1 hour or until toothpick inserted comes out clean. When done, turn out on a rack to cool. Makes 1 loaf. Submitted by: JenH |
