RHUBARB NUT BREAD 
1 1/2 c. brown sugar
2/3 c. oil (olive, ok)
1 egg, beaten
1 c. buttermilk
1 tsp. baking sodatsp. vanilla
2 1/2 c. flour
1 1/2 c. rhubarb, cut sm. pieces
1/2 c. chopped nuts

Combine brown sugar, oil, and beaten egg. In another small bowl, mix together milk, baking soda, salt, and vanilla. Add milk mixture to sugar mixture alternately with flour, beating well after each addition. Fold in rhubarb and nuts. Turn into 2 greased and floured 8 x 4 x 3 inch loaf pans. Bake at 350 degrees for 1 hour or until tester is clean.
