CHEESE STRATA 
8 slices French or Italian bread
1 onion
1/2 lb. sliced mushrooms
8-10 slices bacon, cut up
1 c. shredded Swiss cheese
1 c. extra sharp cheese

LIQUID:

4 slightly beaten eggs
2 c. milk
1/2 tsp. salt
1 tbsp. flour

Fry bacon and saute onions and mushrooms. Butter 9x13 inch pan. Place solid layer of buttered bread on bottom of pan. Then layer the bacon and mushrooms and onions. Then spread cheese over all. Repeat bacon, mushroom and onion layers. Add liquid, mix over top. Bake at 375 degrees for 30-35 minutes.

Can be refrigerated overnight. Great for lunch or brunch.

Serves 8-10.
