MICROWAVE BRAN MUFFINS 
4 eggs
1 qt. buttermilk
5 c. flour
3 c. sugar
1 tbsp. pumpkin pie spice
4 tsp. baking soda
2 tsp. salt
1 c. oil
1 (15 oz.) box Raisin Bran

In large bowl beat eggs and blend in buttermilk. Add flour, sugar, soda and salt. Mix in oil and bran flakes. Let batter set 24 hours. Keep covered in refrigerator. Will keep 6 weeks. Bake heaping tablespoon full in styrofoam cup 60 to 65 seconds in microwave. (Can use each cup twice.)

Since microwave ovens vary in power, you may need to adjust your cooking time.
