MICROWAVE BLUEBERRY COFFEE CAKE 
1 lg. pkg. blueberry muffin mix

Pour into 9 inch round glass dish. Remove to small bowl, add and mix:

1 tbsp. dry mix
1/3 c. brown sugar
1 tsp. cinnamon

Empty, rinse and drain:

1 can blueberries

Add to glass dish:

2 tbsp. oil
1 egg
1/2 c. water

Mix with fork until well blended (1 to 2 minutes). Sprinkle drained blueberries over and fold in gently. Cover dish with waxed paper. Microwave on high 2 minutes. Turn dish 1/4 turn and bake 2 minutes (or until top is moist but not runny). Remove waxed paper and sprinkle with topping. Bake 1 minute on high, uncovered. Let stand 10 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
