CURRY WILD RICE 
1 c. wild rice
2 c. water
1 tbsp. olive oil
1 green pepper, chopped
3/4 tsp. curry
1/3 c. mayonnaise
4 green onions
12 pimento olives
12 oz. marinated artichokes
Salt and pepper to taste

Bring water (or substitute chicken broth). Add rice and olive oil. Boil 5 minutes. Simmer 45 minutes. Add green pepper, scallions, olives, and artichokes, curry and mayonnaise. May be served at room temperature.
