CURRY-RAISIN RICE 
1 can chicken broth
1/3 c. raisins
1/3 c. coconut (optional)
1 tbsp. butter
1 1/2 tsp. curry powder
1 1/2 c. dry instant rice

Bring chicken broth, raisins, coconut, butter and curry powder to a boil in saucepan. Stir in rice. Cover; remove from heat and let stand for 5 minutes. Fluff with a fork before serving. Serves 4.
