THE GOODEST CHINESE SPARERIBS 
4 lbs. spareribs, cut into serving pieces
2 scallions (white only), chopped
2 garlic cloves
2 tbsp. catsup
3 tbsp. brown sugar
1/2 c. pineapple juice
1/16 tsp. black pepper
1 heaping tsp. Dijon mustard
4 tbsp. chili sauce
3 tbsp. soy sauce
1/2 c. honey
2 tsp. lemon juice
1/2 tsp. dry mustard
1/4 tsp. powdered ginger

Prepare marinade by combining all ingredients (except spareribs) in saucepan and bring to a boil. Pour over spareribs in glass baking dish. Cover tightly, refrigerate and marinate overnight, turning several times.

Bake in preheated oven 325 degrees for about 2 hours or until tender. Place under broiler to brown and crisp. (Do not place ribs too close to broiler, they will burn easily.) I like the country ribs. Serves 6.
