CHINESE SPARERIBS 
4 lbs. pork spareribs, lean (1-2 racks)
6 tbsp. Hoisin Sauce
8 tbsp. sugar
8 tbsp. soy sauce
1/2 c. chicken broth (clear)
8 cloves garlic, crushed fine
2 tbsp. sherry or vermouth (sweet or dry)

Marinate ribs in sauce (make by combining the remaining ingredients) 5-6 hours, up to 24 hours. Wipe sauce off before grilling with paper towels. Place ribs on broiling pan and set in center of oven. Place pan of water on lower rack of oven. Roast at 400 degrees for 40 minutes. Turn racks frequently and baste at least twice with leftover sauce. Slice through individual ribs just before serving.
