GELATIN FRUIT RING 
1 (3 oz.) pkg. gelatin, any flavor (lime, orange, raspberry, cherry work well)
1 c. boiling water
1/2 c. cold water
1 tbsp. lemon juice
8 oz. cream cheese, softened
2 c. mini marshmallows
1/2 c. fruit of choice, drained
1/2 c. chopped nuts (optional)

Dissolve gelatin in boiling water. Add cold water and juice. Slowly add mixture to cream cheese, blending until a uniform mix. Chill until thick but not set. Fold in marshmallows, fruit and nuts. Pour into ring or mold. Chill. Unmold when ready to serve. Garnish with additional marshmallows, nuts, whipped cream, fruit or coconut.
