FRUIT SOUP 
2 tbsp. quick-cooking tapioca
1 1/2 c. water (may use drained fruit juice as part of liquid)
1 tbsp. sugar (optional)
Dash of salt (optional)
1 (6 oz.) can concentrated frozen orange juice
1 (#2) can fruit cocktail, drained
Assorted fresh fruits (sliced oranges, bananas, berries, diced apples, etc.)

Place tapioca and water (or drained juice) in saucepan. Bring to boil, stirring constantly. Remove from heat. Add sugar, salt, concentrated orange juice; blend. Cool, stirring once after 15-20 minutes. Cover and chill.

Before serving, add fruit. Do not over chill soup; some of subtle flavor is lost. Approximately 6 servings.

The fruits may be varied according to season and preference. Soup consistency may be adjusted by adding more or less fruit and/or liquid, according to one's taste.
