ENCHILADA CASSEROLE | |
1 can cheddar cheese soup, undiluted or 1/2 lb. cheddar cheese 1 can tomatoes and green chilies, Old El Paso 1 can refried beans 1 lb. hamburger 1 sm. onion, chopped 1 can tomatoes 12 crisp tortillas, or 1 bag Doritos 1/4 tsp. chili powder 1/4 tsp. black pepper 1/2 tsp. salt 1/4 c. catsup mixed with 1/4 c. water Brown hamburger, then add chopped onion, tomatoes, and green chilies, beans and seasonings. Break apart 3/4 of the tortillas and mix in a 2 1/2 quart casserole with meat mixture. Frost with cheese soup and cover with remaining tortilla chips. Bake at 375 degrees for 20-30 minutes, uncovered, or until cheese is ready. |
