MEXICAN CORN BREAD | |
1 c. yellow corn meal 2 eggs, well beaten 1 c. condensed milk 1 tsp. baking soda 3/4 tsp. salt 1 lg. can creamed corn 1/2 c. oil 1/2 lb. ground beef 1 lg. onion, chopped 1/2 lb. sharp cheese, grated Pepper (opt.) Mix first 7 ingredients together; set aside. Brown meat, drain off excess fat. Grease large skillet (cast iron is best). Sprinkle some cornmeal in skillet and place in oven to heat and brown slightly. Pour 1/2 of first mixture over meal in skillet. Sprinkle layer of onion, cheese, pepper and meat over first mixture. Add remainder of first mixture over this. Bake at 350 degrees for 40 to 50 minutes. Best served warm. |
