RED VELVET CAKE 
2 1/2 c. plain flour
1 1/2 c. sugar
1 c. buttermilk
2 eggs
1 tsp. baking soda
1 oz. bottle red food coloring
1 tsp. cocoa
1 1/2 c. sugar
1 tsp. vanilla

Preheat oven to 300 degrees. Mix ingredients well and bake in 3 layers at 300 degrees.

FILLING:

1 box confectioners' sugar
1 stick butter, soft
1 c. grated pecans
1 (8 oz.) pkg. cream cheese
1 tsp. vanilla

Cream sugar and butter, add cream cheese the vanilla and pecans.
