MOM'S BISCOTTI 
3 eggs
1 c. sugar
1/2 c. melted and cooled butter
2 c. flour
2 tsp. baking powder
1/2 tsp. salt
1 c. almonds, ground fine
1 tbsp. anise extract
2 tsp. vanilla extract
1/2 c. maraschino cherries

Beat eggs and sugar. Add cooled butter, anise and vanilla extracts. In separate bowl, combine flour, baking powder, salt, almonds and cherries. Add to creamed mixture. Shape into 2 logs and place on cookie sheet.

Bake at 375°F for 25 minutes. Remove from oven and slice into 1-inch slices; toast on both sides.

Yields about 4 dozen.
