JALAPENO CORN BREAD 
1 c. yellow cornmeal
1 c. sweet milk
1/2 tsp. baking soda
1 tbsp. sugar
3 tsp. baking powder
2 eggs, well beaten
1 can cream corn
1 1/2 tsp. salt
1/2 c. flour
1/4 c. bacon drippings

Mix all above ingredients and set aside; saute 1/2 to 1 pound ground meat, set aside to drain on absorbent paper. Next 3 ingredients are prepared and placed in 3 separate mounds; 1 chopped onion, 1/2 pound sharp cheese, 4 jalapeno peppers (chopped).

Grease casserole pan. Heat and sprinkle thin layer of meal and brown slightly. Pour enough batter to cover bottom of pan. Sprinkle cheese evenly over batter, then meat, onions and peppers. Pour remaining batter on top. Bake 45-50 minutes at 350 degrees.
